Although the name of the restaurant is "Persimmon: an American bistro," the menu consists of selections fused with Asian and European inspired flavors. One example is the shiitake and hoisin sauce-crusted salmon with scallion miso broth. The chef recommended the duck confit salad with maytag blue cheese, sliced pears and port vinaigrette.
