Everything tastes better with "Ketchup"

Like I promised during this week's episode of "The Scene" here is your one of a kind top secret recipe from Ketchup. Now if you're adventurous like me you can probably figure out how to make their specialty ketchups (maple, ranch, raspberry, etc.) by just adding a few more ingredients to the already tasty recipe. Old Fashioned Ketchup Recipe

  • Olive Oil
  • 1 Medium Onion, Diced
  • A few Carrot sticks, Diced
  • A few Celery sticks, Diced
  • 2 TB Garlic, Diced
  • 2 TB Shallots, Diced
  • TT Dried Oregano, Fresh
  • TT Dried Basil, Fresh
  • TT Salt
  • TT Celery Salt
  • TT White Wine
  • TT Pepper
  • 4 Gal Tomato Paste
  • ¾ Gal Apple Cider Vinegar
  • 2 Can Whole Can Tomato
  • TT Garlic Salt
  • Honey
  • Worchester Sauce

Method: 

In a large sauce pan…

  1. Add oil / when sizzling hot
  2. Add onion, carrot, and celery…begin to sweat
  3. Add garlic and shallots
  4. Season with oregano, basil, and celery salt
  5. Deglaze with white wine and reduce by ¼
  6. Add apple cider vinegar / Worchester sauce
  7. Add fresh tomato
  8. Add tomato paste
  9. Add can tomato / honey
  10. Let reduce by ½
  11. Puree all mixture to smooth consistency and put through strainer
  12. Add garlic salt, kosher salt and pepper to taste
